Ruff Side Shoulder - this is a harder working part of the shoulder so suited to slower cooking but full of flavour 1.2kg

Breeds are Texel and Suffolk (best meat breeds there are)

What is Mutton?

A Sheep 2 Years or More.

They have more taste than lamb but require slightly slower cooking and a little resting time but the flavour is so worth the wait plus the sheep gets a better, longer life.
